I tried to just do gossipd, but it was uncontainable, so this ended up being
a complete sweep.
We didn't get much space saving in gossipd, even though we should save
24 bytes per node.

In order to avoid having to ask the HSM for public keys to
their_unilateral/to_us outputs we just store the `scriptPubkey` with the UTXO,
which can then be converted to the P2WPKH address.

These are now logically arrays of pointers. This is much more natural,
and gets rid of the horrible utxo array converters.

The close_info is needed to re-derive the secret key that is supposed
to be used to sign the input spending the output.

It's just a sha256_double, but importantly when we convert it to a
string (in type_to_string, which is used in logging) we use
bitcoin_txid_to_hex() so it's reversed as people expect.
